Pesto
Pesto recipe from the Moosewood cookbook.
Ingredients
- 3 cups of packed fresh basil leaves
- 3 to 4 large cloves garlic
- 1/3 cup of pine nuts or chopped walnuts
- 1/3 cup olive oil
- 1/3 cup parmesan
Method
- Place basil leaves and garlic in blender and mince well
- Add the nuts if desired and continue to blend
- Drizzle in the olive oil and keep running until you have a smooth paste
- Either stir in the parmesan or blend it in
- Add salt and pepper to taste
- To serve, put it at room temperature in a warm serving bowl.
